A true local staple in Canyon County, Gem In & Out is widely known for having the best cheeseburger around, though it faces friendly competition not too far behind. For those who love the classic Mom & Pop food industry that defines the best of Idaho grub, Downtown Caldwell offers everything you could possibly want. Honorably mentioning nearby contenders like Burger Connection and Jacks Drive In, all three local favorites offer a delicious cheeseburger, typically sided with crispy fries and the iconic Scotch N' Soda. But for decades, Gem In & Out has set the standard.


This popular local burger joint has been a favorite since its founding in 1961. While the torch of ownership was passed in the 2020s, the new proprietors have firmly committed to preserving the core of what makes Gem a beloved eatery: its menu and its unique dining experience.


The restaurant was a dedicated family affair for decades after Tim Nielsen’s parents, Tim and Lois Nielsen, acquired the business in 1969. Tim Nielsen, who eventually co-owned the restaurant with his wife Shari Nielsen, worked there since high school. The Nielsens oversaw the establishment's growth until they eventually sold the burger joint in the 20Teens, trusting the new owners to maintain their half-century of tradition.

The new ownership has rigorously upheld the Nielsen family’s dedication to consistency, ensuring the menu remains remarkably unchanged. This commitment means the most popular item, the Gem Burger—a savory combination of ham and cheddar cheese—is still served just as it was on the original menu.


The Buckineer (featuring bacon), added in 1969, remains the second most popular burger. Patrons can still enjoy unique items like the taco burger and classic sides, including tater gems and french fries sourced from the Simplot company.


In a move to cater to more customers, the burger joint has recently introduced a breakfast menu. The restaurant also continues to offer a kids' menu and soft-serve ice cream. However, one key detail remains firm: the eatery is not open on Sundays.


Unique Features and Community Legacy


The new owners also maintain the unique features that set Gem apart, including the distinctive use of flaked ice in their fountain drinks. The flaked ice offers more surface area, helping to hold the carbonation longer and prevent the soda from going flat quickly, perfect for that Scotch N' Soda!


The building remains a one-of-a-kind structure built by the Nielsen family, who ensured the corner location included two accessible drive-in windows. The legacy of community support also endures, with the restaurant maintaining the sports-sponsorship program started by the Nielsens, paying for team entry fees for local Caldwell and Vallivue sports teams.


The new owners, like their predecessors, adhere to the philosophy of "Why would you fix something that’s not broken?"—ensuring the flashing neon sign and the classic taste of Gem In & Out remain a cherished local favorite in Caldwell.
